Back in the day, the rim of choice generally was a Mavic of some sort, whether it was a XC317/717 cross country rim, maybe a D521 for the downhill bike or even a Open Pro road rim. These days it DT Swiss, with their EX511 or 471 covering most mtb applications, the FR range for the burlier end of the spectrum, with the XR range if you want something lighter more cross county or even gravel orientated, leaving the RR range for the road.
They’re durable, good weight, for a reasonable price, a DT Swiss rim should be considered no matter the wheel build.
